My Current Favorite Lunch!!!




Right now I"m in the process of "shifting weight". Why it's shifting and not loosing is because loosing implies that you're gunna find it again. I'm not lookin to find it again but rather ready to shift into a new body to embark on this crazy world post graduation.
With that said- I've fallen back in love with cooking!!

As you all know I'm a Gluten Free Gal! This easy TJ ingredient lunch is entirely gluten free and can be as caloric-ally friendly as you choose. You can buy everything at Trader Joe's for cheap cheap cheap!

Ingredients:
Gluten free Bagels
Spinach
Goat Cheese(in slices)
Brushetta
grape tomatoes
Salt and Pepper

To make it really calorie friendly... I take half of the Bagel and cut it in half again so i get two pizzas instead of one for the same amount of calories...or you can eat just one of them to save the calories for a yummy latte :)

Spread a TBLS of the Brushetta onto your bread
Next cover the entire surface with Spinach leaves
Take a slice of goat cheese (or half a slice to save calz) and layer on top of the spinach
top off with slices grape tomatoes, salt and pepper

Put in the oven on Broil for 5 minutes~
Take two halves and make a sandwich, eat each separate like a pizza-
or put in some tinfoil for later!!

The full half with full cheese=350 Calz

1/2 of the 1/2 with 1/2 cheese for a yummy snack=200 Calz

Total prep time: less than 10 mins.
